Rolled Loin of Pork

Our pork loin is from the middle of the carcass. Although these muscles have worked hard they’re still delicately flavoured and yield a tender texture when cooked slowly. This lean cut is topped with a wonderful layer of fat which infuses flavour and keeps the meat succulent when roasting.
